(Mountain Edition: Coming to you from our home in the Easter Sierra)
You'll need...
Salmon:
A slab of salmon
Olive oil
Salt and Pepper (freshly ground is preferred)
Honey Mustard Sauce (for the Salmon):
4 tablespoons of mayonnaise
2 teaspoons dijon mustard (grainy mustard is great too)
About 1 tablespoon of honey
Green Beans & Bacon:
Green beans (ends cut off)
2 tabs of butter
2 strips of bacon chopped (optional)
Salt and Pepper (freshly ground is preferred)
Mashed Potatoes:
6-8 potatoes peeled (I used yukon gold potatoes but I love all potatoes)
1 teaspoon of salt
2 tablespoons of butter
1/4-1/3 of milk
Prepare Salmon:
Step 1: Drizzle the olive oil, enough to lightly coat your fish but don't soak it.
Step 2: Salt and Pepper to your liking.
Step 3: Rub everything together and make sure the whole fish is coated evenly.
Step 1: Put mayonnaise and mustard into a sauté pan on medium high heat.
Step 2: Add honey and stir with a fork until the mixture starts to turn a darker color. about a table spoon. May also make sweeter depending on mustard spiciness and preference (if my husband could make this sauce it would be all honey).
Mashed Potatoes:
Step 1: Boil a large pot of water and add salt.
Step 2: Let potatoes boil for about 10-15 minutes or until you can easily stick a fork in them.
Step 3: Add butter and milk (add more of each if you would like).
Step 4: Add salt and pepper to taste and start mashing.
Step 1: Steam green beans about 5-6 minutes, until al dente (make sure they're still crunchy)
Step 2: Drain water, add butter and bacon and stir.
Cooking the Salmon:
Step 1: Set the oven to broil.
Step 2: Place the salmon on a cooking sheet or grill pan (remember to keep the door open a crack).
Step 3: Broil the Salmon for 8-10 minutes until the salmon becomes flaky. If the salmon starts to ooze white stuff remove immediately, it's done.
Poor the wine (doesn't have to be white wine).
Drizzle [or smother] the Salmon with the honey mustard sauce.

On a side note to this post: This week my kindergarten teacher and close neighbor passed away from cancer. She loved my pictures and it's people like her that inspire and push me to continue to capture these moments. It's with a very heavy heart that we say goodbye to her. She was a wonderful teacher and a great neighbor. This past Christmas I was fortunate enough to drop by and visit with her. She was one of those people that always made you feel like the most important person in the room. She was special and my heart reaches out to her family at this time. Thank you Mrs. Petersen for pushing me way beyond my kindergarten years.
