Blackberry Pie



What better way to get into the Valentine's spirit than by making something sweet. Chocolate treats are a Valentine's day staple but I like to think outside the box and bake a yummy pie. I'm lucky because no matter what I make it's sure to be a hit with my hubby. He has a sweet tooth but even I have to admit this is one delicious pie.


You'll need...



Pie Crust:
2 cups (10 oz) sifted all-purpose flour
1/2 teaspoon salt
1 tablespoon sugar
3/4 cup (6oz) cold butter
1/2 cup (4oz) water



Blackberry Filing:
4-5 cups blackberries
1 tablespoon fresh lemon juice
3/4 (6 oz) cup sugar
4 tablespoons corn starch
1 teaspoon lemon zest
1/2 teaspoon salt
1 tablespoon butter




Pie Crust
Step 1: In a food processor, combine flour, salt and sugar. Mix well.

Step 2: Add in the butter and pulse until butter is mixed in but still visible in small chunks. 

Step 3: Sprinkle water evenly over mixture, mix until dough starts to form a ball.

Step 4:  Remove from food processor and place into a plastic bag. Squeeze out all of the air. 

Step 5: Let rest for 30 minutes up to 1 day before using or freeze up to 1 month.



Rolling out the Pie Crust:
Step 1: Cut pie crust into two parts and sprinkle clean flat surface with flour (Pastry mats are amazing).

Step 2: Roll out one part of the pie crust, adding flour to the roller as necessary. Roll until 12-14 inches depending on the 9-inch pie dish. Repeat with second part.

Step 3: Place one part into pie dish. Trim the edge leaving 1 inch overhanging. Place second part aside on wax paper.



Pie Filing
Step 1: Preheat oven to 375 degrees.

Step 2: In a large bowl, place berries and drizzle them with lemon juice, coat evenly.

Step 3: In a smaller bowl, mix sugar, corn starch, lemon zest and salt.

Step 4: Pour sugar mixture over berries and toss with spoons or by hand, coat berries evenly.

Step 5: Pour berries into the pie crust lined dish, dot with butter.

Step 6: Place second pie crust over the top and tuck under the bottom pie crust making a seal, pinching all the way around.

Step 7: Slice 5-6 slits in the top of the pie crust with sharp knife.



Step 8: With extra dough, roll and cut out an embellishment, like my heart (not necessary but it's fun!). Place it on the top of the pie and sprinkle it with a tad of sugar.

Step 9: Place in preheated oven and bake for 50-60 minutes, until golden brown.

Step 10: Let cool for at least 3-4 hours until set. If cut too soon it might be a little more like a delicious soup than a pie.
