Yummy [Birthday] Cake


A common misconception is cake from scratch is difficult to make. It's NOT! I promise! Yes you have to gather all of the ingredients but that's about all of the extra work. Once you try this you'll never bake another box cake again, except maybe for the occasional funfetti cake just because they're so fun. 





You'll need...
Cake:
2 sticks of unsalted butter, softened (salted butter is fine too if you like a little salt)
2 cups sugar
4 large eggs
2 3/4 cups flour
1 cup milk
1 teaspoon vanilla extract

Frosting:
2 sticks of unsalted butter softened (salted butter is fine too if you like a little salt)
2-4 cups of confectioners' sugar
1/3 cup of milk
2 teaspoons vanilla extract

Bake the Cake:
Step 1: Preheat oven to 350 degrees

Step 2: Butter and lightly flour two 9 inch round cake pans

Step 3: In a large bowl add butter and mix on a medium speed until butter is smooth

Step 4: Add sugar gradually and beat until fluffy, about 3 minutes

Step 5: Add one egg at a time, beating well after each egg (about 20-30 seconds after each, don't over beat)

Step 6: Add vanilla

Step 7: Start adding flour and milk alternating in about 4 rounds, mix well each time before moving onto another round

Step 8: Divide batter into two cake pans

Step 9: Bake for 25-30 minutes or until a cake tester (aka knife or toothpick) comes out of the middle clean (keep adding 3 minutes onto the baking time until the cake tester comes out clean, every oven is different)

Step 10: Set aside to cool
 


Frosting:

Step 1: In a large bowl, add butter, start mixing on medium

Step 2: Add 2 cups of sugar, then half of the milk and all of the vanilla

Step 3: Add 1/2 cup of sugar, then a little milk, keep alternating and adding until it's a thickness of your liking. Might not use all of the sugar or milk

Step 4: Add flood coloring if desired and mix in well

Step 5: Time to frost or store at room temperature, icing can be stored in an airtight container at room temperature for upto three days

Frosting:
Step 1: Start with cool cake

Step 2: Shave a little off of the top of each cake to make more even

Step 3: On serving platter place one cake layer, add a layer of frosting, then add the next cake layer, like a sandwich

Step 4: Shave a little more off around the border to make even all the way around

Step 5: Frost all the way around

Step 6:  Add candles if needed and enjoy!!
