[Slow Cooker] Corned Beef


A tradition in my family and one of my favorite meals of the year! Here is an easy, hassle free way to make an this Irish favorite. Instead of babysitting your corned beef all day let your slow cooker do the work.


You'll need...
1 3-4 lbs corned beef brisket
8-10 small carrots (6-8 larger ones) cut about 2 inch sections
6-8 red potatoes (washed, skin on) cut in quarters
3 bay leaves
1 teaspoon peppercorns
2 tablespoons Dijon mustard
1 beer (12 oz) any beer (I use Guinness)
2 cups chicken brooth
32 oz+ water
1 cabbage

Step 1: Place carrots and potatoes into slow cooker.

Step 2: Place corned beef on top of potatoes and carrots.

step 3: Add bay leaves, peppercorns and mustard.

Step: 4: Add chicken broth, beer and water (add additional water as needed to cover everything)

Step 5: Set slow cooker on low setting for 8 hours.

Step 6: With 20 minutes left add cabbage.







Finish off the Irish dinner with Irish Soda Bread and a pint of Guinness! Enjoy!
