Apple Pie


It's amazing how food triggers memories. Apple pie reminds me of so much... it reminds me of the hundreds of times I watched my grandmother (who I called "Mam") rolling out her famous pie crust from underneath her kitchen island. It reminds me of my mom teaching me how to make a pie on my very own! It reminds me of the one dessert my grandfather, whom I called "Grandpa D" loved! He hated all things sweet but he loved this pie. 

It's perfect for any occasion and will impress everyone. If you want to become a pie pro, read on!


You'll need... 



Apple Pie:
Flakey Pie Crust - Homemade or store bought
6 - 7 Granny Smith Apples, peeled and cut into slices
Juice of 1 lemon
3/4 (6 oz) cup sugar
4 tablespoons corn starch
1/2 teaspoon salt
1 teaspoon of ground cinnamon
1/2 teaspoon of ground nutmeg
1 tablespoon butter
1 egg white

Pie Filling:
Step 1: Preheat oven to 450 degrees.

Step 2: In a large bowl, place apples and drizzle them with lemon juice, coat evenly.

Step 3: In a smaller bowl, mix sugar, corn starch, salt, cinnamon and nutmeg.

Step 4: Pour sugar mixture over apples and toss with spoons or by hand, coat apples evenly.

Step 5: Pour apples into the pie crust lined dish, dot with butter.

Step 6: Place second pie crust over the top and tuck under the bottom pie crust making a seal, pinching all the way around.

Step 7: Slice 5-6 slits in the top of the pie crust with sharp knife.



Step 8: With extra dough, roll and cut out an embellishment, like my apple (not necessary but it's fun!).

Step 9: Place it on the top of the pie and "wash" the top of your pie by brushing on some egg white lightly on the top. Then sprinkle it with a little extra sugar.



 Step 10: Place in preheated oven and bake for 10 minutes at 450 degrees, then lower temp to 350 degrees and bake for 45 minutes or until golden brown.

Step 11: Let cool for at least 1-2 hours until set. It's okay to serve warm and with a good scoop of vanilla ice cream!
